Valencian wines have a unique Mediterranean character. They are produced from the proximity of the land, using traditional techniques and the good knowledge of wine growers throughout the region. It is of great importance for the environment, and in general for the health of all, to value our proximity products. This means supporting local crops, promoted by KM0 farmers, who supply fresh and natural produce, while maintaining the local food chain.

Sagunto is not only the Spanish city where the layout of its old Jewish quarter is best preserved, but also the one with the most remains of objects, spaces and unique buildings that once formed part of the daily life of this community. This culture has contributed to the formation of current Mediterranean gastronomy with its variety of products, recipes and unique drinks. These include developed kosher wines, produced from selected and processed grapes using the strict requirements of purity and kosher. These wines have become an important part of Mediterranean Sephardic menus, offering an intense and rich experience of flavours and aromas for diners. These wines are proof of the ancient and beautiful Jewish heritage in the town of Sagunto and offer the territory a valuable contribution in terms of gastronomy and culture.
THE RESTAURANT
It all started more than 30 years ago. Back in 85, when Amparo and Vicente (François’ parents) returned to their hometown, Sagunto, after a long stay in France. They had emigrated to France, like many other Spaniards, looking for a better future in France. Annecy was the chosen place and there Amparo devoted herself to the culinary world and learned from the best chefs in the area. Among others, Marc Veyrat, who has been selected the best chef in France on several occasions.
Currently, our cuisine is based on the vital and gastronomic journey initiated by the family in France. We add the Mediterranean roots with seasonal ingredients, giving space to producers in the area to offer a creative, personal, and healthy proposal.
The cultivation of the vine and, more specifically, of the Monastrell variety, has been a fundamental element for the region of Camp de Morvedre since Roman times. Important quantities of wine were produced in its fields and prepared to be exported and consumed internationally. Unfortunately, the arrival of phylloxera in the mid-nineteenth century drastically reduced the yield of the vineyards in Sagunto, which led to abandon wine production to strengthen the cultivation of orange trees that, from then on, would become the main agricultural product of the region. Despite this, the memory of that cherished vintage still survives today, since the monastrell grape variety is known in France as Mourvèdre.

Sagunto no es solamente la ciudad española donde mejor se conserva el trazado de su antigua judería, sino también la que más restos posee de objetos, espacios y edificios singulares que un día formaron parte de la vida cotidiana de esta comunidad. Esta cultura ha contribuido a la formación de la gastronomía mediterránea actual con su variedad de productos, recetas y bebidas únicas. Dentro de estos destacan los vinos kosher desarrollados, producidos a partir de uvas seleccionadas y procesadas usando los estrictos requisitos de pureza y kosher. Estos vinos se han convertido en una parte importante de los menús sefardíes mediterráneos, ofreciendo una intensa y rica experiencia de sabores y aromas para los comensales. Estos vinos son una prueba de la antigua y hermosa herencia judía de la localidad de Sagunto, y ofrecen al territorio un valioso aporte en cuanto a gastronomía y cultura.
